WINE
Grapes are picked from the field when quality is optimum. The grapes are de-stemmed and crushed. The juice is fermented with skins and seeds until the desired color and flavor characters are achieved. After the fermentation seizes, the wine is pressed to undergo the Malolactic fermentation. The wine is then aged to reach maturity.
ARAK
Arak is the traditional drink of Syria that is enjoyed on every occasion. When the golden white grapes quality is optimum, they are picked, crushed and fermented. The white wines are distilled as many times as necessary to achieve the desired purity. The aniseed seed from the pimpinela anisum is added during the second distillation. It is the Flavor behind the triple distilled Brandy. Our aniseed from “Hinneh” on the Syrian slopes of Mount Hermon and they are the best in the world in terms of quality and yield of its essential oil. Our Arak is aged in clay jars and left to breath for many months until it reaches the optimum maturity.
